It won’t be wrong to call quinoa the magical grain. It is gluten-free, contains anti-oxidants, vitamin E and all the amazing vitamin B forms, and has minerals such as iron, calcium, and phosphorus. Moreover, it has beneficial amino acids and is termed as the ‘whole protein’. The ancient food is a great alternative to wheat and rice and is perfect for dinnertime.
Ingredients:
Let’s make a super quinoa bowl! You will need:
- 1 cup quinoa
- 1 avocado, sliced
- 1 cucumber, sliced
- 10-12 black olives
- 1 cup chicken, diced and boiled or grilled whole
For dressing:
- Olive oil
- Lemon juice
- Red chili flakes
- Salt & pepper
Instructions:
Rinse the quinoa grains under cold tap water. Rinsing is necessary to remove the bitter flavor. Move the washed quinoa in the pot and boil it on medium-low flame. Sprinkle some salt and boil until the grains are tender. Next, move the quinoa into a big salad bowl and add sliced avocado, cucumber, olives, and diced chicken. Add the dressing according to your taste and toss. Enjoy while watching your favorite movie.
