Masticating juicers, also known as slow juicers are the latest technology in juicing. The comparative benefits being that juice is extracted at a slower, therefore cooler rate to produce juice that is still full of vitamins. Masticating juicers work by crushing or grinding the fruit pulp slowly in order to extract the maximum amount of juice at lower speeds and lower temperatures. This makes masticating juicers excellent at extracting juice from leaves and softer fruit. Extracting milk from nuts are also a feature of this juicer.

The masticating juicer is typically horizontal in design with a cork-screw shaped press, known as the auger, rotated against a fine mesh in which the juice is then directed through to a siphon tube. The remaining pulp is channeled out of the juicer and can easily be collected for composting.

Some newer versions have now been designed with vertical, more traditional process. This allows them to have a smaller footprint, thereby taking up less space on the kitchen counter.

In some of the larger, pricier versions of the masticating juicer, it is possible to adjust the mesh size therefore using the juicer for other functions such as a grinder, food processor even a pasta extruder.
